I recently received an email based question from Beverley of St. Paul Oregon. Her question was can too much marinade salt over tenderize my steaks? The answer is yes. I generally don't add plain granulated table or kosher salt to my marinade recipes, as many of you have probably already noticed. The reason being is that I like to let my steaks marinate overnight, so that they really soak up all of the wonderful marinade flavors. Too much salt in a marinade will soften up your meat quickly, so it's not really ideal for long sitting marinades. I also like to get my salt source in my marinade from soy sauce, Worcestershire sauce, teriyaki sauce, oyster sauce, or fish sauce, as these sauces are much more flavorful then plain salt. So in conclusion, if you do add salt to your steak marinade, then just make sure you don't let it sit too long.
