I would like to send out a personal thank you to Joe for allowing me to publish this ostrich meat herb marinade recipe. To get the recipe going, you will first need to take out a decent sized mixing bowl. Stir into your bowl the balsamic vinegar, coarse ground black pepper, crushed thyme leaves, Italian extra virgin olive oil, crushed rosemary, and minced garlic. Make sure that you thoroughly stir the marinade, as you want to get a nice even spread of ingredients. Once your done making it, seal the bowl and then slide it into the refrigerator to chill for half an hour to a full hour. This blending process will unlock all of those hidden flavor notes. Once that process is complete, give the marinade a couple of finishing stirs. It is now ready for use, so place your ostrich meat or ostrich steaks into it, and then let them marinate for four to six hours, depending on how big and tough the meat proportions are.
