To make your steaks retain more marinade, you can lightly tenderize them before marinating, or you can lightly perforate them with a sharp meat fork or steak knife. Another way to help your steak soak up marinade, is to work the liquid into the meat manually after your steaks and marinade have already been placed into a freezer bag. If you gently massage the meat, the marinade will slowly work it's way into it. The last option you have, is to simply let your steaks marinate longer.
