If I don't have time to let my steaks marinate for a lengthy period of time, then I will tenderize them before a brief marinating process. If I do have time to adequately marinate my steaks, then I won't tenderize them, as they'll naturally tenderize in the marinade, especially if left to marinate overnight. If you tenderize your steaks and let them marinate for a long period of time, then your steak could become too soft, and the meat will break apart almost like hamburger. With regard to the maximum marinating time if you do indeed tenderize your steak, I would only marinate them for half an hour to one full hour, no more.
