When you use your leftover steak marinade for basting, it's important you cook the marinade thoroughly after it's been applied. As the marinade has been in contact with raw meat, you shouldn't use it unless it's well cooked, and you certainly should not place it on finished meat. When I baste my grilling steaks, I always let them cook until all of the liquid has been seared off. Another great way to bypass this whole problem, is to simply save some unused marinade when you first make it, and then use it strictly for basting. If your marinade has not come into contact with any raw meat, then you can use it on finished meat, or even as a dipping sauce should you wish. Thank you again for the submitting the question.
